Restaurant News: Cooper’s Hawk Winery Opening First Sarasota Area Location – Sarasota Herald-Tribune

A national, wine-focused concept featuring a restaurant, tasting room and retail space will soon debut its first Sarasota area location.

Cooper’s Hawk Winery & Restaurants is set to open June 28 in the Fruitville Commons development east of Interstate 75. Founded in 2005 and headquartered in Illinois, Cooper’s Hawk has locations in 10 states, including Tampa and Naples in Florida.

“Southwest Florida has seen rapid growth with its world-renowned beaches and ideal location on the Gulf Coast of Mexico,” Cooper’s Hawk founder Tim McEnery said in a statement. “As a year-round, go-to destination in South Florida and a place many go to escape the cold, northern winters, Sarasota was the perfect location for the Cooper’s Hawk brand.”

The Sarasota location’s general manager Pedro Torres said the concept is inspired by Napa Valley wineries, offering a tasting room, retail and wine club, while also featuring a full-service restaurant. Cooper’s Hawk’s main wine production facility in Illinois produces more than 40 varietals, serving its own wine at its locations.

Cooper’s Hawk wine, which includes red, white, sparkling and other varieties, will also be sold in the retail space along with accessories such as decanters and glassware. Customers can also receive an exclusive wine each month and other benefits through a wine club membership, with one or two-bottle options.

The food menu includes a variety of pastas and risottos, burgers and sandwiches, steak and seafood dishes, and salads. Torres said there will also be an in-house pastry chef for its pastries and desserts, such as its truffles.

Along with the tasting room, there is a full-service bar that in addition to wine serves liquor and beer, including a Cooper’s Hawk Ale made by Goose Island. The Sarasota location will also have a roughly 1,000-square-foot patio with about 20 tables, Torres said.
